Berry Picking

Berry picking is a favorite summer activity. Call a local orchard to make arrangements, then make this a family or co-op outing.

Afterwards, children will be eager to help put the berries to good use! Use them fresh and freeze the extras.

  • Berry Patch Blueberry Pie

    Make a double crust recipe for 10" pie and fill with mixture below (I use the pre-made type crust):

    4 cups blueberries
    1 cup sugar
    1/4 cup lemon juice
    1/3 cup cornstarch

    Mix berries, sugar and lemon juice in a heavy saucepan. Bring to a boil, stirring constantly until thick. Cool. Pour into unbaked pie shell and bake at 400' for about 35 minutes or until crust is golden.

  • Healthy Berry Parfait

    Wash and dry berries--strawberries, blueberries, rasberries. Fill a parfait glass (or any tall, clear glass) in the following order:

    Scoop of vanilla yoghurt
    Scoop of berries
    Yoghurt
    Berries
    Top with whip cream and a cherry.

    One type or several kinds of fruit may be used. Bananas also are good in this dessert.

  • Freeze strawberries and use in place of ice cubes.

  • Smoothies

    In the blender, mix

    1 cup milk
    6 strawberries
    handful of blueberries
    1/2 banana

    Blend until smooth. Serve immediately.

    Mix it up! Any and all combinations of fruits are delicious. Add yoghurt or chocolate flavoring for additional variety.
